Grilled Sweet Potatoes

So... I haven't posted in quite a while. I am going to try this recipe soon and thought you might enjoy it too.

1 1/2 pound sweet potatoes,
peeled and sliced crosswise
into 1/4 inch thick slices

2 tsp. olive oil

1 tsp. garlic powder

1 tsp. paprika

1/4 tsp. Salt, plus more
to taste

Pepper to taste

Place the potatoe slices in a large mixing bowl. Drizzle with olive oil then sprinkle with the garlic powder, paprika,salt, and pepper. Toss well to combine.

Grill potatoes on medium heat until tender or Bake in the oven @ 400 until tender crisp.

Headed in the Right Direction

Weigh in Wednesday's

So, we started a new thing here at work. We are going to do Weigh in Wednesday's. It's really motivating when you know that everyone is going to be weighing in with you on Wednesday morning and you don't want to be more than you were the last week. I think it is going to be a wonderful support group and I am super excited about it. I feel like I need people to be motivated with me in order for me to succeed. What better place than at work when we are together most of the week and we can help each other throughout the day!

Baked Ziti


SUPER Yummy! So I have the biggest looser cookbook and tonight I made Baked Ziti. We loved it! It has kind of a sweet spaghetti taste. I actually halfed the recipe and it made plenty! I feel so motivated when I can try new things. This blog helps me to stay focused!

Here is the recipe

Olive oil Spray (to spray the pan)
1 box (14 1/2 ounce) box fiber enriched ziti or penne rigate
1 15 oz. container fat free ricotta cheese
2 lg. egg whites
4 C. shredded reduce-fat mozzarella cheese
1/4 tsp. garlic powder
Salt, to taste
Ground black pepper to taste
Crushed red pepper flakes, to taste
3 1/2 C. Marinara sauce
2 Tbsp. reduce fat Parmesan cheese

Boil Pasta to al dente according to package directions and drain

In a mixing bowl, combine ricotta, egg whites and all but 1 cup of the mozzerella cheese until well combined. Add the garlic powder, salt, pepper and red pepper flakes. Stir the noodles into the mixture

Pour 1 C. sauce on bottom of 9X13 pan
Layer noodle mixture
Pour another 1 C. of marinara sauce
Layer the rest of noodle mixture
Pour the rest of sauce on top
Put the rest of mozzarella Cheese and Parmesan cheese on top

Cover with foil and bake 20 min. at 450 degrees
Remove foil and bake 10 more minutes or until cheese is melted
Let cool 5 min. and cut into 8 equal servings

Makes 8 servings

Nutrition Per Serving: 350 Calories, 22 g protein, 57 g carbohydrates, 6 g fat (3 g saturated), 20 mg cholesterol, 8 g fiber, 429 mg sodium
If you are counting Weight Watchers points it's 7 Points per serving

I cut this recipe in half for us and it was plenty! I got six servings out of half a recipe. I did make it with low fat ricotta instead of fat free though. I hope someone else tries it. Let me know what you think

Constant Journey!

Well, Today is Jan.1 2010 and I decided to start a new blog today! Weight has always been a struggle for me, as it is for many. I have seriously debated whether or not I should start a blog to write about trying to loose weight. I am never too open about things like that because, well... I just think if I tell everyone then people will be watching me. Well, this year I decided that I am going to blog about eating healthy, exercising and hopefully loosing a few pounds. Steve helped me think of the name of this blog "What goes up must come down". He is so supportive and thankfully he is attracted to me and supportive of anything I do. Even if I never lost a pound I know he would still adore me. But for my own health and to help me feel better I am starting this blog. I hope that it can help others too! I would love people's feedback and thoughts and support. Hopefully if any of you are in the same predicament this blog will help you too! If you have any ideas you want me to post just let me know.

I am going to post new healthy recipes and substitution ideas on here too. So if you have any great recipes or tips send um on over. Happy blogging to all and hopefully this helps!
